Vegan Mac and Blue Cheese

Macaroni pasta with a blue cheese twist and totally plant based.
Ingredients

300g dried Macaroni pasta
-
100g margarine or vegan butter
-
1 heaped tablespoon all purpose flour
-
3 tablespoons Blue Bandit blue cheese dressing mix

1 slice sour dough bread
-
350ml soy milk
-
1 tablespoon white wine vinegar
-
1 tablespoon sugar
-
1 teaspoon Pizza The Action seasoning
Directions
Bring a pan of water to the boil and add a generous pinch of salt.
Add the macaroni and boil for 10 minutes or until cooked.
Meanwhile make a roux by heating the vegan butter in a pan and adding the flour. Cook for 3 minutes.
Slowly add the soy milk to create a smooth white sauce.
Add the Blue Bandit seasoning, sugar and vinegar and cook into the sauce for 5 minutes.
Mix the cooked pasta with the sauce and spoon into little bowls.
Add the croutons on top and sprinkle on some Pizza The Action seasoning.
Bake for 10 minutes at 180 degrees until crispy.
