Just when you thought there was no new ways left to eat pizza... along comes pizza soup. A comforting, homely way to enjoy all of your favourite pizza flavours.
Ingredients

½ large red onion

1 tin chopped tomatoes

400ml vegetable or chicken stock

1 tablespoon tomato puree

½ cup grated cheddar cheese
-
1 packet chorizo or salami
-
½ jar chopped olives
-
1 bell pepper - finely diced
-
2-3 chopped mushrooms
-
3 teaspoons Pizza The Action seasoning
-
1 tablespoon balsamic vinegar
-
1 baguette of garlic bread
-
1 ball Mozzarella
-
1 tablespoon olive oil for frying
Directions
Get a wide saucepan and fry the diced onions for 5-10 minutes until soft.
Add the tomato puree then the chorizo, pepper and mushrooms (Or your favourite pizza toppings) to the pan and continue to fry for another 5 minutes on a medium heat.
Add the chopped tomatoes, balsamic vinegar, stock and 2-3 teaspoons of Pizza The Action seasoning to the pot and boil on a low heat for 20 minutes until those flavours have melded.
Whilst that’s cooking make the croutons - Cut up the garlic bread and lay the pieces on their side. Top with a disc of mozzarella cheese, a sprinkle of Pizza The Action seasonings and a slice of chorizo.
Bake the croutons for 10-15 minutes or until golden.
Once everything is cooked chuck the pizza soup into a bowl, top with some grated cheddar cheese and those amazing croutons and stuff your face!
