To make vegan: Just use a vegan burger.
Ingredients

3 tablespoons vegan mayo

1 tablespoon sesame oil

1 heaped tablespoon fermented vegan kimchi

1 tablespoon sugar

1 tablespoon mirin
-
1 tablespoon soy sauce

3 tablespoons all purpose flour

1 tablespoon ramen seasoning
-
1 chicken thigh or veggie burger - Marinated in soy sauce, garlic, five spice, rice wine vinegar (Optional)

1 Gem lettuce leaf

1 tablespoon kimchi pickle
-
Sprinkle sesame seeds

4 pieces pickled ginger
-
1 egg

Half bottle of vegetable oil
For the Kimchi Sauce
For the Burger
Directions
Pop all the sauce ingredients in a blender and blitz for 30 seconds then put in the fridge to chill.
Heat to oil in a wide saucepan to a medium heat (around 170C)
Dip the chicken thigh in the flour, then the egg, then back into the flour.
Drop into the oil and fry for 5 minutes or until crisp and cooked.
Build the burger: Kimchi sauce > Lettuce leaf > Burger > More kimchi sauce > Pickled ginger > Kimchi Pickle > Sesame seeds > Top bun
