Inspired by the popular Korean street food. Stuffed with delicious egg, cabbage and carrot then covered in Kewpie mayo and sweet hot sauce. Sooooo good.
Ingredients

4 slices extra thick white bread (We got ours at Aldi)

2 large eggs

1 tablespoon sliced white cabbage

1 tablespoons sliced carrot

1 tablespoon sliced onion

1 teaspoon Ramen seasoning

2 nobs butter
-
1 tablespoon Kyubi Hot Sauce

1 ball Mozzarella
Directions
Finely slice the cabbage, carrot and onion then add to 2 beaten eggs.
Sprinkle in the ramen seasoning to flavour the mix.
Set the mix aside then melt some butter on a medium heat and toast the outside of your bread until brown.
Melt more butter and add the egg mix to the pan. Cook on a medium heat until brown and the veg are cooked through. Just like an omelette.
Add sliced mozzarella to one half of the egg then flip over and leave another couple of minutes until the cheese is melted (See video)
Chop the egg in half then assemble the sandwich. Starting with the egg/cheese mix then topping with Kewpie mayo and delicious sweet Kyubi hot sauce.
